Ingredients:
1 onion, diced
3 cloves garlic, diced
3 cm length of ginger, grated
1 cup lentils, soaked overnight
Optional veggies: diced red pepper, corn, chopped spinach
1/4 cup nutritional yeast
Salt & pepper to taste, curry powder to taste
3 Tbsp coconut oil
Enough TVP (textured vegetable protein) to form a patty
Directions:
- Cook the lentils until soft, cool
- Sauté onion in coconut oil until caramelized. Add red pepper if using
- Add garlic & ginger (& spinach and corn if using), sauté 2 more minutes, stirring frequently, put into large bowl
- Add lentils to garlic/ginger/onion mixture and combine
- Mix in nutritional yeast
- Add salt & pepper & curry powder to taste
- Add enough TVP to form a patty
- Grill over the fire or in a frying pan, serve with favorite condiments
