Autumn Gnocchi Recipe from GoBistro at Cabot Shores Wilderness Resort!

One of the favorite dishes at Cabot Shores’ GoBistro is Chef Ron & Nicole’s Autumn Gnocchi recipe.  Of course, it is a favorite during all seasons, but especially during autumn with the recent harvest of vegetables from the garden, guests love the mix of Gnocchi and Swiss chard, for example.










Gnocchi  Recipe Ingredients:

3 lbs – russet potato (cooked)
1 lbs – all purpose flour
4 each – egg yolks
1 tbsp – kosher salt


1. Peel & cook potatoes; boil or steam
2. Put the cooked potatoes into a mixer and mash with a paddle attachment until smooth
3. All the flour, salt & egg yolks and mix until everything JUST comes together as a dough. Do not over work, it will make the gnocchi tough
4. Using a dusting of flour to keep the dough from sticking; cut sections off and roll into a 1inch diameter “snake”
5. Cut the “snake” with a bench/dough scraper into 1inch pieces, toss with more flour to keep from sticking
6. Boil the gnocchi in salted water until they float, remove, tossed with oil & allow to cool

Fall Gnocchi dish recipe:

1 tbsp – Butter
1 tsp – Vegetable Oil
1 cup – Gnocchi
2 tsp – Garlic (minced)
¼ cup – Butternut Squash (roasted)
¼ cup – Almonds
1 cup – Swiss Chard
1 tbsp – Oregano (fresh)
1 each – Lemon juice & zest
Kosher Salt & Cracked Black Pepper to taste
3 tbsp – Ricotta


1. Heat a non-stick pan, add the butter & oil
2. Add the gnocchi & continue to cook until a sear forms on each of them, stir periodically
3. Add the garlic, squash, almonds & continue to cook until the ingredients become aromatic. About 2 minutes
4. Add the Swiss chard, oregano, lemon, salt & pepper and remove from heat. The residual heat will warm these ingredients all that they need
5. Transfer to a bowl & top with ricotta cheese
