Cape Breton Lobster Considered Culinary Delicacy
The Wall Street Journal has an article and video about the Cape Breton
“Fourchu” lobster. It is considered a culinary delicacy because it
comes from cold northern waters and has a high yield and sweet flavour.
Fourchu is a fishing community in Richmond County, very small, but
now world renowned and featured in the International Culinary Institute.
They are called the “kobe beef” of lobster.
